Delicious lemon and oregano stuffed lamb, an ideal dish for family feasts and celebrations.
Ingredients:
  • 40.00 ml fresh oregano leaves, chopped
  • 125.00 ml raisins, chopped
  • 2 tsp lemon zest, finely grated
  • 2 x 800g Brand boneless lamb leg roasts
  • 18.20 gm Brand pure olive oil
Instructions:
  • 1. Preheat the oven to 190C or 170C for fan-forced ovens. 2. Mix oregano, raisins, and lemon zest in a small bowl. 3. Unwrap the meat and flatten it out. 4. Spread the raisin mixture evenly along the center of each piece. 5. Roll up the meat and tie it tightly with kitchen string.
  • In a generously oiled large baking dish, lay the lamb. Brush with oil and generously season with salt and freshly ground black pepper. Add 1/2 cup water to the bottom of the dish.
  • Roast in the oven for 40 minutes for a perfectly medium result. Once done, cover loosely with foil and let it rest for 15 minutes before carving.
