Ingredients:
  • 4 (about 1kg) chicken marylands
  • 400g baby coliban (chat) potatoes
  • 2 red onions, cut into wedges
  • 2 lemons, cut into wedges
  • 12 small marinated artichoke hearts
  • 375ml chicken stock
  • 250ml white wine
  • 125.00 ml purple basil leaves
  • Steamed snow peas or beans, to serve
Instructions:
  • - Preheat oven to 200°C. - Heat a large flameproof roasting pan over high heat. - Season the chicken with salt and pepper, then sear in the pan until golden on each side (2-3 minutes per side). - Transfer the chicken to a plate. - Add potatoes, onion, and lemon to the pan. Cook, turning occasionally, until golden (about 3 minutes).
  • Add the chicken back to the pan along with the artichokes, chicken stock, and wine. Roast in the oven, basting the chicken with pan juices, until it's golden brown and fully cooked, about 20 minutes.
  • Take out from the oven and generously garnish with fresh basil leaves. Serve promptly with your choice of steamed snow peas or beans.
