Luscious lemon blueberry bread with zesty glaze. Bursting with juicy berries.
Ingredients:
  • 1 cup white sugar
  • 0.33333334326744 cup melted butter
  • 2 large eggs
  • 3 tablespoons lemon juice
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 cup milk
  • 1 cup fresh or frozen blueberries
  • 0.5 cup chopped walnuts
  • 2 tablespoons grated lemon zest
  • 0.25 cup white sugar
  • 2 tablespoons lemon juice
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease an 8x4-inch loaf pan.
  • Combine sugar, butter, eggs, and lemon juice in a large mixing bowl and beat until smooth.
  • In a separate bowl, mix flour, baking powder, and salt. Gradually blend into the egg mixture with milk, alternating. Gently fold in blueberries, nuts, and lemon zest. Transfer batter to the prepared pan.
  • Bake in the oven until a toothpick inserted in the center comes out clean, for 60-70 minutes. Let the bread cool in the pan for 10 minutes.
  • Prepare the glaze topping by stirring sugar and lemon juice together in a small bowl until a smooth mixture forms.
  • Take the bread out of the pan and generously drizzle it with the sweet glaze. Let it cool further on a wire rack.
