Delicious lemon breakfast bread for a fresh morning start.
Ingredients:
  • 1.5 cups white sugar
  • 1 cup applesauce
  • 0.75 cup vegetable oil
  • 3 eggs
  • 1.5 teaspoons dried lemon peel (such as Penzey's)
  • 1 teaspoon lemon extract
  • 0.75 cup milk
  • 2.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.75 teaspoon salt
  • 0.5 cup white sugar
  • 1 tablespoon water, or as needed
  • 0.5 teaspoon lemon extract
Instructions:
  • Preheat your oven to a cozy 325 degrees F (165 degrees C) and generously grease a loaf pan.
  • Combine 1 1/2 cups sugar, applesauce, oil, and eggs in a bowl. Mix in lemon peel and 1 teaspoon lemon extract, followed by pouring in milk and stirring until well combined.
  • In a bowl, combine flour, baking powder, and salt with a whisk. Mix in the applesauce mixture until fully incorporated. Transfer the batter to the prepared loaf pan.
  • Bake in the preheated oven for 75 minutes or until a toothpick inserted in the center comes out clean. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
  • Combine 1/2 cup sugar, water, and 1/2 teaspoon lemon extract in a saucepan over medium heat. Stir until the sugar melts and the mixture thickens to a glaze consistency, about 1 to 2 minutes. Poke holes in the warm bread and generously brush the glaze over the loaf.
