Lemon Chicken Orzo Soup

Lemon orzo soup with shredded rotisserie chicken: a quick and comforting meal bursting with bright flavors. Ready in just 35 minutes!
Ingredients:
  • 2 cartons (32 oz each) Progresso™ chicken broth (8 cups)
  • 1/4 teaspoon pepper
  • 1/2 cup uncooked orzo pasta (3.2 oz)
  • 1/3 cup fresh lemon juice
  • 1/4 cup Gold Medal™ all-purpose flour
  • 3 cups shredded deli rotisserie chicken
  • 2 tablespoons butter
  • 1 tablespoon chopped fresh dill leaves
Instructions:
  • Pour 7 cups of chicken broth into a 5-quart Dutch oven. Season with salt and pepper, then bring to a boil. Stir in the orzo and simmer over medium heat for 7 to 10 minutes until the orzo is tender, stirring occasionally.
  • Combine the remaining 1 cup of broth, lemon juice, and flour in a 2-cup glass measuring cup. Whisk vigorously until well mixed. Slowly pour the mixture into the soup, then bring it back to a simmer. Cook and stir for 1 to 2 minutes until the soup slightly thickens.
  • Add the chicken and stir, cooking for 1 to 2 minutes until heated through. Take the pan off the heat and mix in the butter. Serve in bowls and top with fresh dill leaves before serving.
