Indulgent lemon cranberry cheesecake bars: luscious layers of oaty crust, zesty cream cheese filling, and sweet cranberry topping.
Ingredients:
  • 1.5 cups rolled oats
  • 0.75 cup brown sugar
  • 1 cup butter, softened
  • 1 (8 ounce) package cream cheese
  • 1 (14 ounce) can sweetened condensed milk
  • 0.25 cup lemon juice
  • 1 tablespoon brown sugar
  • 2 tablespoons cornstarch
  • 1 (16 ounce) can whole berry cranberry sauce
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, combine flour, oats, and 3/4 cup brown sugar. Blend in butter until mixture becomes crumbly. Set aside 1 1/2 cups of the mixture and press the rest onto the bottom of a 9x13-inch pan.
  • Place the crust in the preheated oven and bake for 15 minutes.
  • In a small bowl, blend cream cheese and sweetened condensed milk until fluffy. Mix in lemon juice and spread over crust. Combine cranberry sauce, cornstarch, and brown sugar in another bowl. Spoon over cream cheese layer. Sprinkle top with reserved crust mixture.
  • Bake until the top is golden, about 35 to 40 minutes in the preheated oven. Allow to cool completely before cutting into bars. Refrigerate the bars after covering them.
