Lemon Cupcakes with Lemon Frosting

Indulge in irresistible lemon cupcakes with zesty lemon frosting for all the lemon fanatics!
Ingredients:
  • 0.75 cup white sugar, or more to taste
  • 0.5 cup butter, softened
  • 2 eggs
  • 2 teaspoons lemon extract
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1.5 cups all-purpose flour
  • 0.66666668653488 cup cold milk
  • 3 tablespoons butter, softened
  • 1 teaspoon milk, or more as needed
  • 1 cup confectioners' sugar, or more as needed
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and prep a dozen muffin cups by greasing or lining them with paper liners.
  • In a bowl, use an electric mixer to blend white sugar, 1/2 cup butter, eggs, and 2 teaspoons lemon extract until smooth and creamy. Add baking powder and salt, and blend until smooth. Gently mix in flour and cold milk alternately until just combined. Spoon batter into muffin cups.
  • Bake until a toothpick inserted in the center of a cupcake comes out clean, about 15 to 20 minutes in a preheated oven.
  • In a bowl, cream 3 tablespoons of butter with 2 teaspoons of lemon extract and milk until smooth. Gradually mix in confectioners' sugar until desired consistency is achieved. Spread the mixture onto the cupcakes.
