Indulgent lemon curd, a delectable pairing for scones or sugar cookies.
Ingredients:
  • 3 eggs
  • 0.33333334326744 cup lemon juice
  • 0.25 cup butter
  • 2 teaspoons lemon zest
Instructions:
  • In a double boiler over simmering water, whisk together eggs, sugar, and lemon juice until well combined. Stir constantly until thickened, about 7 to 10 minutes.
  • Strain to remove lumps, then gently blend in butter until smooth. Fold in lemon zest. Refrigerate until thickened, approximately 4 hours.
