Decadent, citrusy custard perfect for pairing with scones, crumpets, or English muffins.
Ingredients:
  • 1 cup sugar
  • 1 tablespoon finely shredded lemon peel
  • 1 cup lemon juice (5 large lemons)
  • 3 tablespoons firm butter or margarine, cut up
  • 3 large eggs, slightly beaten
Instructions:
  • Combine sugar, lemon peel, and lemon juice in a sturdy 1 1/2-quart saucepan using a wire whisk.
  • Add the butter and eggs to the mixture. Cook on medium heat for approximately 8 minutes, while stirring constantly, until the mixture thickens and coats the back of a spoon (avoid boiling). Quickly transfer the mixture to either a 1-pint container or two 1-cup containers.
  • Refrigerate covered for up to 2 months to maintain freshness.
