Indulge in a delightful lemon dessert perfect for winter.
Ingredients:
  • 50g butter, at room temperature
  • 161.25 gm caster sugar
  • 20.00 ml lemon zest, finely grated
  • 3 eggs, separated
  • 342.48 gm milk
  • 86.63 gm lemon juice, strained
  • 37.50 gm self-raising flour
  • icing Sugar, to dust
Instructions:
  • Preheat your oven to 180°C or 160°C fan. Lightly grease six 3/4 cup capacity ovenproof dishes. With an electric beater, whip together butter, sugar, zest, and egg yolks until light and creamy.
  • Slowly incorporate the milk followed by the juice. Mix in the flour gently until combined.
  • Whip egg whites until soft peaks form, then gently fold them into the lemon mixture to maintain their fluffiness. Spoon the mixture into the prepared dishes and place them in a baking dish. Pour boiling water around the dishes until it reaches halfway up the sides.
  • Bake for 20 minutes until a gentle touch reveals their firmness. Add a delicate dusting of icing sugar before serving hot.
