Indulge in a luscious no-bake lemon cheesecake slice with a buttery biscuit base.
Ingredients:
  • 400g pkt plain digestive biscuits, broken into pieces
  • 175g salted butter, melted
  • 125g salted butter, at room temperature
  • 55g (1/4 cup) raw caster sugar
  • 250g cream cheese, softened
  • 150g (1 cup) soft icing sugar
  • 300ml Thickened Cream, whipped to firm peaks
  • 187.50 ml store-bought lemon curd
Instructions:
  • Prepare a 26 x 20cm slice pan by greasing it and lining it with baking paper.
  • Pulse biscuits in a food processor until they form coarse crumbs. Pour in melted butter and sugar, process until mixed. Spread two-thirds of the mix in the pan. Press flat with a glass. Chill in the fridge for 30 minutes.
  • In a stand mixer with the paddle attachment, combine cream cheese, softened butter, icing sugar, and vanilla. Beat until light and creamy.
  • Incorporate the cream cheese and lemon curd into the whipped cream by gently folding.
  • Spread the creamy mixture on top of the biscuit base, ensuring it is smooth. Sprinkle the remaining biscuit crumb over it. Chill in the fridge for 4 hours or overnight before serving.
