Lemon Drop Cake

Elevate a simple cake mix by adding refreshing citrus flavor with a sweet and tangy lemon drizzle after baking.
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Lemon Cake Mix
  • 1 cup powdered sugar
  • 1/4 cup fresh lemon juice (1 large lemon)
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Lemon Frosting
  • Lemon drop candies, crushed, if desired
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pans). Line two 8-inch square pans with foil, extending it 2 inches over 2 sides of the pans. Grease or spray foil on the bottoms and sides.
  • Prepare the cake batter per the instructions on the box, then transfer it to the pans. Bake for 25 to 32 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool for 15 minutes.
  • Combine powdered sugar and fresh lemon juice in a small bowl. Use a fork to poke holes on the warm cake's top every 1/2 inch, ensuring to wipe the fork occasionally to prevent sticking. Spread the lemon mixture over the cake and refrigerate for about 2 hours until chilled. Remove the cake from pans by lifting with foil and gently peel away the foil.
  • Place the frosting in a small microwavable bowl and microwave uncovered on High for 15 seconds. On a serving plate, put down one cake with the rounded side down; trim if needed to ensure the layer sits flat. Spread half of the frosting on top. Add the second cake with the rounded side up, then frost the top of the cake with the rest of the frosting. Decorate with lemon drop candies and store loosely covered.
