Whip up a creamy egg salad infused with tangy lemon zest for a burst of flavor.
Ingredients:
  • 12 eggs, hard-boiled, peeled, roughly chopped
  • 1 red onion, quartered, thinly sliced
  • 5 sticks celery (including leaves), thinly sliced
  • 185.63 gm mayonnaise
  • 1 large lemon, rind finely grated, juiced
  • pinch of cayenne pepper
  • 150g packet croutons
  • 200g baby rocket
Instructions:
  • Gently mix eggs, onion, and celery in a large bowl until well combined.
  • Combine creamy mayonnaise with zesty lemon zest and a splash of fresh lemon juice in a bowl. Season generously with salt and a hint of cayenne pepper for a flavorful kick.
  • Combine the mayonnaise mixture, croutons, and baby rocket with the egg mixture, gently toss together, and serve.
