Ingredients:
  • Vegetable oil, to grease
  • 1kg chicken wings
  • 60ml (1/4 cup) fresh lemon juice
  • 1 tsp grated lemon rind
  • 60ml (1/4 cup) honey
  • 42.00 gm soy sauce
  • 18.00 gm sesame seeds
  • Mixed salad leaves, to serve
  • Sliced white crusty bread, to serve
Instructions:
  • Preheat the oven to 200°C and lightly grease a large baking dish with oil. Using kitchen scissors, remove the wing tips from each chicken wing and cut them in half at the joint. Arrange the chicken wings in a single layer in the dish.
  • Mix together the lemon juice, lemon rind, honey, soy sauce, and sesame seeds in a small bowl. Drizzle the mixture over the chicken and toss gently to ensure even coating.
  • Roast in a hot oven, rotating periodically and brushing with delicious pan drippings, for 35-40 minutes until the chicken is beautifully golden and fully cooked. Take out from the oven.
  • Present the chicken on a platter and enjoy with a side of mixed salad leaves and crusty bread. To switch things up, substitute the chicken wings with 8 chicken drumsticks (about 1kg). Make three cuts in the thickest part of each drumstick with a small sharp knife. Roast in a preheated oven, rotating and brushing with pan drippings, for 50-55 minutes until golden and fully cooked.
