Ingredients:
  • 2.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1.3333333730698 cups milk
  • 10 tablespoons unsalted butter, cut into 10 pieces
  • 2 cups white sugar
  • 5 eggs
  • 2 teaspoons vanilla extract
  • 0.5 cup butter, softened
  • 2 cups powdered sugar
  • 2 teaspoons grated lemon zest
  • 1 teaspoon vanilla extract
  • 1.5 cups lemon curd
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease two 9-inch round baking pans.
  • Combine the flour, baking powder, and salt in a medium mixing bowl, stirring until well mixed.
  • In a medium saucepan, gently warm the milk and butter over low heat until the milk is hot and the butter is melted, which should take about 5 minutes. Take the saucepan off the heat.
  • In a large mixing bowl, use an electric mixer to beat sugar, eggs, and vanilla extract on medium speed until thickened and lightened. Reduce speed to low and gradually add the flour mixture, beating until blended. Slowly pour in the hot milk mixture and continue to beat until combined.
  • Distribute the batter evenly among the baking pans.
  • Bake in the preheated oven for 30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then invert onto cooling racks to cool completely for an additional 15 minutes.
  • Prepare the frosting as the cakes cool. Using an electric mixer on medium speed, cream together the cream cheese and butter until smooth. Gradually mix in the powdered sugar on low speed. Add the lemon zest and vanilla extract, then beat until smooth.
  • After cooling, elegantly slice each cake in half horizontally. Fill each layer with zesty lemon curd. Then, generously spread creamy cream cheese frosting on top and around the cake.
