Lemon Lentil Rice

Delicious South Indian lemon rice with rice, lentils, and veggies.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 teaspoon mustard seeds
  • 0.5 cup chopped carrot
  • 0.5 cup chopped fresh green beans
  • 1 cup long grain white rice
  • 0.5 cup dry brown lentils
  • 0.25 cup fresh lemon juice
  • 1 pinch salt, or to taste
  • 1 teaspoon chili powder, or to taste
Instructions:
  • In a large saucepan over medium-high heat, heat the oil until shimmering. Add the mustard seeds and cook until they pop like popcorn. Next, add the carrot and green beans and sauté for about 2 minutes to blend the flavors.
  • 1. Add water, rice, and lentils to a pot. Simmer on low heat with a lid for 20 minutes until rice and lentils are tender. 2. Stir in lemon juice, and season with salt and chili powder. 3. Cover and let stand for 5-10 minutes before serving.
