Cool off this summer with our refreshing Lemon Meringue Blender Blizzard. Freezing milk ice cubes for at least 6 hours is the key! Top it off with Arnott's Lemon Crisp biscuits for a cafe-quality crunch.
Ingredients:
  • 330ml (1 1/3 cups) full cream milk, plus 1-2 tbsp, extra
  • 1/2 x 395g can sweetened condensed milk
  • 3 Arnott’s Lemon Crisp biscuits, coarsely chopped
  • 40.00 ml bought lemon curd, plus extra, to serve
  • Meringue kisses, coarsely chopped, to serve
Instructions:
  • Fill an ice cube tray with milk and freeze for at least 6 hours until firm. Freeze condensed milk in a freezer-proof container for 6 hours or overnight until chilled.
  • Combine frozen milk and condensed milk in a food processor until smooth, adding additional milk as needed. Mix in biscuits until fully incorporated.
  • Pour three-quarters of the milk mixture evenly into two 185ml capacity serving glasses. Create a well in the center of each glass and add 1 tbsp of lemon curd into each well. Pour the remaining milk mixture into the glasses, then top them with extra lemon curd. Finish by sprinkling meringue on top. Serve promptly.
