Easy lemon icebox pie with fluffy meringue, zesty filling, and crunchy crust - perfect summer treat!
Ingredients:
  • 1 (9 inch) prepared graham cracker crust
  • 1 (14 ounce) can sweetened condensed milk
  • 3 egg yolks
  • 0.5 cup lemon juice
  • 3 egg whites
  • 5 teaspoons white sugar
Instructions:
  • Preheat the broiler until it reaches 500 degrees F (260 degrees C).
  • In a medium mixing bowl, whisk together condensed milk, egg yolks, and lemon juice until smooth. Pour the creamy mixture into the graham cracker crust.
  • Whisk egg whites with sugar in a separate glass or metal bowl until glossy stiff peaks form. Gently spread the meringue on top of the luscious lemon filling.
  • Broil just until the meringue is golden and set. Chill the pie in the refrigerator.
