Lemon meringue margarita

Sweet and tangy lemon-tequila cocktail topped with a charming mini meringue.
Ingredients:
  • 19.20 gm sea salt flakes
  • 40.00 ml finely grated lemon rind
  • 8 mini meringues
  • 1 lemon wedge
  • 173.25 gm lemon juice
  • 82.50 ml sugar syrup
  • 125.00 ml Cointreau
  • 82.50 ml Olmeca Altos Plata tequila
  • 165.00 ml crushed ice
  • Lemon twist, to serve
Instructions:
  • Combine the salt, lemon zest, and half of the meringues in a mortar and pestle. Crush them together until fine, then transfer to a plate.
  • Take the lemon wedge and glide it along the rim of 4 serving glasses. Then, dip each glass into the meringue mixture to coat the rim evenly.
  • For two cocktails, add half of the lemon juice, sugar syrup, Cointreau, Olmeca Altos Plata tequila, and ice into a shaker. Shake well, then strain evenly into two glasses. Cheers!
  • Continue by adding the rest of the lemon juice, sugar syrup, Cointreau, tequila, and ice. Finish by placing the remaining meringues on top. Garnish with lemon twists and serve promptly.
