Delicious frozen lemon meringue pie pops with graham cracker crust and fluffy topping on a stick - a heavenly treat for summer!
Ingredients:
  • 1 box (4-serving size) lemon instant pudding and pie filling mix
  • 1 1/2 cups half-and-half
  • 1/4 cup fresh lemon juice
  • 1 container (6 oz) Yoplait® Original yogurt lemon burst
  • 7 tablespoons coarsely crushed graham crackers
  • 1/4 cup marshmallow creme
  • 1/2 cup whipping cream
Instructions:
  • In a medium bowl, vigorously whisk together the pudding mix and half-and-half for 2 minutes until smooth. Stir in lemon juice and yogurt until well combined.
  • Divide the mixture evenly among 7 (5-oz) paper cups, then sprinkle 1 tablespoon of graham crackers on each. Cover the cups with foil, insert a craft stick into the center of each pop, or follow your ice pop molds' instructions if using. Freeze for approximately 6 hours until solid.
  • As pops are ready to be served, whip marshmallow creme and 1 tablespoon of whipping cream in a small bowl using an electric mixer on low speed until smooth. Gradually add the rest of the whipping cream, increase speed to high, and continue beating until stiff peaks develop. Carefully remove each pop from its cup and top each with approximately 2 tablespoons of the marshmallow mixture, creating fluffy meringue peaks.
