Tangy rhubarb and shredded coconut elevate this classic dessert with a burst of flavor and delightful crunch.
Ingredients:
  • 2 cups flour
  • 1 cup unsalted butter
  • 0.5 cup white sugar
  • 4 eggs
  • 1 cup white sugar, or to taste
  • 6 tablespoons all-purpose flour
  • 2 cups chopped rhubarb, or more to taste
  • 1 cup shredded coconut
  • 6 tablespoons lemon juice
  • 2 teaspoons vanilla extract
Instructions:
  • Preheat oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine 2 cups of flour, butter, and 1/2 cup of white sugar in a bowl until crumbly; then press into the bottom of a 12x9-inch baking dish.
  • Bake until the crust turns a beautiful light brown, about 25-30 minutes in a preheated oven.
  • Combine eggs, sugar, flour in a bowl; mix until smooth. Add rhubarb, coconut, lemon juice, and vanilla extract; stir to coat. Pour mixture over crust.
  • Bake in a hot oven until the fruit layer is firm, for about 35 to 40 minutes. Allow bars to cool fully before enjoying.
