Try this easy and delicious lemon tea cake for a sweet treat with a citrus twist.
Ingredients:
  • 100ml milk
  • Melted butter, to grease
  • 200g (1 1/3 cups) plain flour
  • 150g (1 cup) self-raising flour
  • 285g (1 1/3 cups) caster sugar
  • 150g butter, melted, cooled
  • 3 eggs
  • 20.00 ml finely grated lemon rind
  • 125ml (1/2 cup) fresh lemon juice
  • 150g (1 cup) pure icing sugar, sifted
  • Lemon rind, zested, to decorate
Instructions:
  • Preheat your oven to 180°C. Grease a 22cm bundt pan with melted butter. In a bowl, sift together the flour and caster sugar. Create a well in the center. In another bowl, whisk together the butter, eggs, milk, lemon rind, and 100ml lemon juice until smooth.
  • Combine the zesty lemon mixture with the flour blend, mixing until fully incorporated. Transfer the batter into the pan and level the top. Bake for 40-45 minutes until a toothpick inserted in the cake comes out clean. Cool on a wire rack before serving.
  • Transfer the cake to a serving platter. Mix the icing sugar and leftover lemon juice in a small bowl. Drizzle the icing over the cake and garnish with lemon rind. Let it sit to firm up.
