Tender sweet potatoes topped with crispy, cheesy bread crumbs- a delightful dish for any occasion.
Ingredients:
  • 4 cups fresh bread crumbs
  • 4 tablespoons butter, melted
  • salt to taste
  • 1 pinch cayenne pepper, or more to taste
  • 0.5 cup finely grated Parmigiano-Reggiano cheese
  • 1.25 cups grated sharp white Cheddar cheese, divided
  • 1 teaspoon chopped fresh chives, or to taste
  • 2.75 pounds sweet potatoes, peeled and cut into 1 1/2-inch chunks
  • 1 medium lemon, zested and juiced
  • 1 teaspoon kosher salt, or to taste
  • 1 teaspoon freshly ground black pepper
Instructions:
  • Collect all your ingredients and preheat your oven to 375 degrees F (190 degrees C. Place a silicone liner, like Silpat®, on a baking sheet.
  • In a mixing bowl, combine bread crumbs with melted butter. Mix in salt, cayenne, and Parmigiano-Reggiano cheese until well coated. Spread mixture evenly on baking sheet and top with 1 cup Cheddar cheese.
  • Bake in the preheated oven for 20-25 minutes until golden brown. Remove, allow to cool, and keep the oven on.
  • In a mixing bowl, combine sweet potatoes with fresh lemon zest and juice, a sprinkle of salt, a dash of pepper, a pinch of cayenne, and velvety melted butter; mix until sweet potatoes are thoroughly coated. Transfer the mixture to a buttered baking dish promptly.
  • Bake in the center of the oven for around 1 hour until the potatoes are extremely tender.
  • Crumble the crispy, cheesy bread crumbs into small pieces, then scatter evenly over the potatoes. Gently press them down and sprinkle the remaining ¼ cup of Cheddar on top.
  • Continue baking in the oven until golden brown, for an additional 15 to 20 minutes.
  • Garnish with fresh chives just before serving.
