Classic lemon cookies with rare bakers' ammonia for a unique twist, reminiscent of days gone by and easily sourced at the drugstore.
Ingredients:
2cups milk
2tablespoons bakers' ammonia
2.5 cups granulated sugar
1cuplard
1teaspoonlemon oil
6cups all-purpose flour
Instructions:
Preheat the oven to 350 degrees F (175 degrees C) while you dissolve the ammonia in the milk. Set aside once done.
Combine lard and sugar in a large bowl until smooth. Add lemon oil, eggs, and salt. Alternate adding milk and flour to create a soft dough. Roll into walnut-sized balls and place on an ungreased cookie sheet. Flatten with a sugared glass.
Bake in a preheated oven for 10 to 12 minutes until firm. Then transfer the cookies from the sheets to wire racks to cool.
