Elevate summer veggies with sweet, smoky flavors on the grill.
Ingredients:
  • zucchini
  • summer squash
  • cherry tomatoes
  • mushrooms
  • bell peppers
  • onion
  • 12 (12-inch) skewers*
  • 0.25 cup olive oil
  • lemon, juiced
  • 1 clove garlic, minced, or more to taste
  • ground black pepper
Instructions:
  • Cut large vegetables into big and satisfying 1-inch pieces. Skewer the vegetables. Combine the remaining ingredients by whisking them in a small bowl.
  • Preheat grill. Coat kabobs with lemon mixture. Grill for 10-15 minutes until vegetables reach desired tenderness, turning as needed for even cooking. Finish with a drizzle of remaining lemon mixture. Serve while warm.
