Elevate your antipasto platter with white wine, lemon, and garlic pickled mushrooms.
Ingredients:
  • 3 cups sliced fresh mushrooms, or more to taste
  • 4 sprigs fresh thyme
  • 0.5 serrano pepper, thinly sliced, or more to taste
  • 1 cup white wine
  • 0.5 cup water
  • 2.5 tablespoons kosher salt
  • 1 tablespoon white sugar
  • 4 cloves garlic, thinly sliced
  • 20 whole black peppercorns
  • 12 coriander seeds
  • 3 (1-inch) strips lemon zest, or more to taste
Instructions:
  • Layer four sterilized 8-ounce jars with mushrooms, filling them 3/4 full. Top each jar with a sprig of thyme and a scattering of serrano pepper slices.
  • In a small saucepan over medium-low heat, meld together white wine, water, kosher salt, sugar, garlic, peppercorns, coriander seeds, and lemon zest. Let it simmer for about 5 minutes until the sugar dissolves. Once ready, pour this flavorful mixture over the mushrooms in each jar.
  • Seal the jars tightly and refrigerate. Let the flavors meld for 1 to 2 days.
