Elevate collard greens with smoky paprika and tangy lemon for a flavor-packed vegetarian side dish.
Ingredients:
  • 1.5 pounds collard greens
  • 1 small yellow onion, thinly sliced
  • 2 tablespoons lemon juice
  • 1 teaspoon smoked paprika
Instructions:
  • Remove the tough stems from the collard greens. Stack the leaves, roll them up, and slice into 1-inch pieces. Give them a good rinse.
  • 1. In a skillet over medium heat, saute onion until soft, about 5 minutes. Add garlic and continue cooking for an additional 5 minutes. 2. Toss in greens and saute over medium heat until tender, stirring often, for about 15 minutes. 3. Stir in lemon juice, paprika, salt, and pepper; cook for an additional 3 minutes. 4. Serve warm.
