Vegetarian-friendly BBQ side salad – a must-have for your next gathering.
Ingredients:
  • 250g haloumi, cut into 2cm pieces
  • 9.20 gm olive oil
  • 400g can lentils, drained, rinsed
  • 250g cherry tomatoes, halved
  • 125.00 ml chopped fresh flat-leaf parsley leaves
  • 2 celery stalks, trimmed, thinly sliced
  • 36.40 gm olive oil
  • 42.00 gm lemon juice
Instructions:
  • Prepare the Lemon dressing by combining oil, lemon juice, and pepper in a screw-top jar. Secure the lid tightly and shake well to combine.
  • In a non-stick frying pan over medium-high heat, heat half of the oil. Add half of the haloumi and cook for 1 to 2 minutes, turning occasionally, until golden. Transfer to a plate. Repeat the process with the remaining oil and haloumi.
  • Combine lentils, tomato, parsley, celery, and haloumi in a bowl. Drizzle with dressing and toss gently. Serve and enjoy!
