Transformed patties with various soup mixes and chopped nuts. Enjoy with tomato or mushroom sauce. Best as a gourmet burger with lettuce, tomato, cheese, mayo, ketchup, and sprouts on a bun or homemade bread.
Ingredients:
  • 1 cup dry brown lentils
  • 2.5 cups water
  • 0.25 cup milk
  • 1 cup wheat and barley nugget cereal (e.g. Grape-Nuts™)
  • 1 (1 ounce) envelope dry onion soup mix
  • 0.5 teaspoon poultry seasoning
  • 2 eggs, beaten
  • 0.5 cup chopped walnuts
  • 1 cup seasoned dry bread crumbs
  • 2 tablespoons vegetable oil
Instructions:
  • In a saucepan, combine lentils and water, bring to a boil, cover, then simmer on low for about 30 minutes until tender. Drain excess water before using.
  • Combine the cooked lentils, milk, wheat and barley cereal, eggs, and walnuts in a large bowl. Add the onion soup mix and poultry seasoning. Use your hands to mix thoroughly until well combined as the mixture is thick. Allow it to sit for 30 minutes at room temperature or refrigerate overnight.
  • In a large skillet over medium heat, warm oil. Using an ice cream scoop, form balls from the lentil mixture. Roll the scoops in bread crumbs, flattening into patties as you coat them. Cook patties in the skillet until golden brown on both sides, around 5 minutes per side, adjusting for patty thickness.
