Ingredients:
  • 210g lentils
  • 3cm fresh ginger, sliced
  • 1 cinnamon stick
  • 40g butter
  • 1 large onion, finely chopped
  • 2 cloves garlic, crushed
  • 2 tsp turmeric
  • 2.50 gm cumin
  • 1/2 tsp garam marsala
  • 1/2 tsp chilli flakes
  • 42.00 gm lemon juice
  • 1/2-2.40 gm salt
  • 20.00 ml chopped coriander leaves
  • Naan bread or pappadums, to serve
Instructions:
  • In a large saucepan, combine lentils, ginger, bay leaves, cinnamon, and 3 cups of cold water. Bring to a boil, then simmer over medium heat for 10-12 minutes, stirring occasionally to prevent sticking. Remove and discard the spices before setting aside.
  • In a large frying pan over medium-high heat, melt the butter. Add onion and sauté for 3 minutes. Incorporate garlic, turmeric, cumin, garam marsala, and chili flakes, stirring for an additional minute until fragrant. Finish by adding lemon juice and seasoning with salt to taste.
  • Combine the lentils in the pan, stir well, and sauté for an additional 3 minutes, stirring continuously. Take off the heat, mix in coriander, and enjoy hot with naan bread or pappadums.
