Hearty lentil soup with spinach, tomatoes, and herbs. Quick and comforting for busy nights.
Ingredients:
  • 0.25 cup olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 cups dry lentils
  • 8 cups water
  • 1 (14.5 ounce) can crushed tomatoes
  • 0.5 cup spinach, rinsed and thinly sliced
  • 2 tablespoons vinegar
  • salt to taste
  • ground black pepper to taste
Instructions:
  • In a large soup pot over medium heat, sauté onions, carrots, and celery in oil until onions are tender, for about 3 to 5 minutes.
  • Add the garlic, bay leaf, oregano, and basil to the pot and sauté for 2 minutes until fragrant.
  • Combine lentils with water and tomatoes in the pot, stirring gently. Bring the mixture to a boil, then lower the heat and allow it to simmer for at least 1 hour or until the lentils are tender.
  • Add the spinach and cook until it wilts just before serving.
  • Add a splash of vinegar and season generously with salt and pepper, then taste and adjust seasoning to your liking.
  • Savor while hot!
