Savory adobo chicken wings cooked with soy, spices, and jalapeños, then pan-fried with garlic for a delicious twist on a classic dish.
Ingredients:
  • 3 pounds chicken wings, separated at joints, tips discarded
  • 1 cup distilled white vinegar
  • 0.5 cup water
  • 2 bay leaves
  • 1 teaspoon whole or cracked black peppercorns
  • 1 medium onion, chopped
  • 2 jalapeno peppers
  • 0.5 cup soy sauce, or to taste
  • 1 whole head garlic, minced
Instructions:
  • - Bring a large pot of water to a boil, then add wings and boil for 5 to 8 minutes. Drain in a colander, rinse under warm water, and return to the dry pot. Add vinegar, water, bay leaves, peppercorns, onion, and jalapeños. Bring to a simmer and cook over low heat for 20 minutes.
  • Stir in soy sauce and let it simmer for an additional 10 to 15 minutes until the sauce is reduced by half. Place the wings in a colander and set aside. Add whole garlic cloves to the pan liquid. Simmer until the sauce thickens and the jalapeños burst open, releasing their seeds into the reduction.
  • Preheat a nonstick skillet over medium heat. Cook chicken wings and minced garlic until garlic is tender and wings are browned, about 10 minutes. Toss wings in sauce before serving.
