Light Lemon-Sesame Chicken

Whip up a quick and delicious Asian-inspired chicken dish in 30 minutes.
Ingredients:
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1/4 cup fat-free egg product or 1 egg
  • 2 tablespoons lemon juice
  • 1/2 cup Bisquick Heart Smart® mix
  • 1/2 teaspoon paprika
  • 2 tablespoons toasted sesame seed
  • 1 tablespoon canola or vegetable oil
  • 1/2 cup Progresso™ chicken broth (from 32-oz carton)
  • 3 tablespoons sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon grated lemon peel
  • 2 medium green onions, sliced (2 tablespoons)
Instructions:
  • Place each chicken breast between sheets of plastic wrap or waxed paper and gently pound with a meat mallet or rolling pin until 1/4 inch thick.
  • Combine egg product and lemon juice in a small bowl, beating with a fork or whisk. In a 1-gallon resealable plastic bag, mix Bisquick mix, paprika, and sesame seed.
  • Coat chicken in egg mixture, then transfer to bag with coating. Shake until chicken is fully coated.
  • Heat oil in a 12-inch nonstick skillet over medium-high heat. Add chicken and cook for 6 to 8 minutes, turning once, until chicken is cooked through.
  • In a 1-quart saucepan, simmer all sauce ingredients except onions on medium heat until thickened and bubbly. Drizzle the sauce over the chicken before serving and top with onions.
