Lightened-Up Million-Dollar Casserole

Lightened-up Million-Dollar Spaghetti Casserole with turkey instead of beef and no heavy cream. Comfort food that's satisfying without being heavy.
Ingredients:
  • 12 oz uncooked spaghetti
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons butter, melted
  • 1 cup low-fat cottage cheese
  • 4 oz 1/3-less-fat cream cheese (Neufchâtel), softened, cubed (from 8-oz package)
  • 1 lb ground turkey
  • 1 jar (25.5 oz) Muir Glen™ organic tomato basil pasta sauce
  • 1 cup shredded mozzarella cheese (4 oz)
  • 1/4 cup thinly sliced fresh basil leaves or small fresh basil leaves
Instructions:
  • Preheat your oven to 350°F and generously coat a 13x9-inch (3-quart) baking dish with cooking spray.
  • Prepare spaghetti according to package instructions.
  • In a medium bowl, whisk together the egg, Parmesan cheese, parsley, and melted butter. Drain the spaghetti and return it to the pan. Quickly toss the spaghetti with the egg mixture until evenly coated, then transfer the mixture to a baking dish.
  • Combine the cottage cheese and cream cheese in a medium bowl, then spread the mixture evenly over the spaghetti in the baking dish.
  • Cook the turkey in a 10-inch nonstick skillet over medium heat for 5 to 8 minutes until browned, stirring occasionally. Remove from heat, mix in pasta sauce, and spread over the cottage cheese layer in the baking dish. Sprinkle mozzarella cheese evenly on top.
  • Bake for 35 to 40 minutes until the cheese is melted and lightly browned. Allow it to rest for 5 minutes, then garnish with fresh basil.
