Upgrade your favorite Smothered Chicken Casserole with lean chicken, milk instead of half-and-half, and reduced bacon for a healthier twist that doesn't skimp on flavor. Enjoy all the taste with half the fat in this delicious lightened-up version!
Ingredients:
  • 6 oz uncooked angel hair pasta
  • 4 boneless skinless chicken breasts (1 1/4 lb)
  • 2 teaspoons Montreal chicken grill seasoning
  • 1 teaspoon oil
  • 1 can (10 3/4 oz) reduced fat condensed cream of chicken soup
  • 1/2 cup milk
  • 1 tablespoon butter, melted
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon smoked paprika
  • 2 cups Cascadian Farm™ Frozen Organic Broccoli Florets
  • 2 slices chopped cooked bacon
Instructions:
  • Preheat oven to 375°F. Grease a 13x9-inch (3-quart) baking dish with cooking spray. Cook pasta according to package instructions, then drain.
  • Massage grill seasoning onto chicken breasts.
  • Heat oil in a 10-inch nonstick skillet over medium heat. Cook chicken for 9 to 11 minutes, turning once, until deeply browned on both sides (chicken will not be fully cooked).
  • Combine soup, milk, melted butter, thyme, paprika, and salt in a large bowl; set aside 1/2 cup of the mixture. Mix in cooked pasta and frozen broccoli.
  • Spread the pasta mixture in a baking dish, layer chicken on top, and spoon the reserved sauce over the chicken. Bake covered for 35 to 40 minutes until the chicken reaches an internal temperature of 165°F. Let it rest for 5 minutes, then finish by topping with bacon.
