Lightsaber cake

Impress Star Wars fans with this epic lightsaber cake at your next party.
Ingredients:
  • 2 x 340g packets golden butter cake mix or 2 quantities Homemade butter cake (see related recipe)
  • 250g butter, softened
  • 450.00 gm icing sugar mixture
  • 41.20 gm milk
  • Blue and black gel food colourings
  • 2 mini jam rollettes
  • 2 nougat honey logs
  • 1.5 metres licorice strap
  • 3 tsp small silver cachous
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease and line a 6cm-deep, 22cm x 32cm rectangular baking pan with baking paper.
  • For a delicious cake, make packet cake as directed or homemade butter cake. Pour mixture into pan, smoothing the surface. Bake for 50 minutes or until a skewer comes out clean. Let it rest in the pan for 10 minutes before flipping onto a wire rack to cool.
  • To make Buttercream icing, beat butter in a bowl with an electric mixer until pale. Slowly add the icing sugar mixture and milk while beating continuously until well combined. Set aside 1/2 cup of icing and color it blue. Color the remaining icing grey using black food coloring. Level the top of the cake with a serrated knife and place it, cut-side down, on a cake board. Cover the top and sides of the cake with the grey icing. Position one swiss roll diagonally on one corner of the cake to create the lightsaber handle. Cut off one-third of the remaining swiss roll at an angle and attach it to the swiss roll on the cake using a little icing. Cover the swiss rolls with grey icing to form the handle. Trim about 4cm from one nougat roll and discard. Arrange the nougat rolls end to end next to the swiss rolls to form the lightsaber. Finish by spreading blue icing on the nougat roll.
  • Cut three 12cm lengths from licorice straps and position 2 to form wide grips and 1 diagonally overlapping. Then, cut four 1.5cm x 2.5cm pieces and position on top half, and ten 4mm x 4cm strips on the bottom half for different grips. Form a coil with a 3mm x 22cm strip for base, and outline lightsaber with a 3mm x 42cm strip. Decorate with thin strips of remaining licorice and cachous stars. Serve and enjoy!
