Lime and coconut curd

Tangy lime curd infused with coconut and sugar, perfect for tropical desserts.
Ingredients:
  • 100g unsalted butter, chopped
  • 215g (1 cup) caster sugar
  • 20.00 ml finely grated lime rind
  • 80ml (1/3 cup) fresh lime juice, strained
  • 3 eggs, lightly whisked
  • 45g (1/2 cup) desiccated coconut
Instructions:
  • In a medium saucepan, gently mix the butter, sugar, lime rind, and lime juice over low heat for 3-4 minutes until the sugar completely dissolves. Take off the heat.
  • Strain the egg into a bowl using a fine sieve. Mix the egg into the butter mixture with a wooden spoon until well combined. Cook the mixture over low heat, stirring constantly for about 8 minutes or until it thickens to coat the back of a spoon.
  • Gently fold in the coconut. Transfer the hot curd into sterilized jars, seal, and flip upside down for 2 minutes. Return to upright position and let it cool.
