Squeeze lime juice over fresh blueberries for a zesty summer delight.
Ingredients:
  • 250ml lime juice
  • 75g caster sugar
  • 75g blueberry
  • 10 small mint sprigs
  • 10 small lime slices
Instructions:
  • In a saucepan over low heat, combine lime juice, sugar, and 2 cups (500ml) water. Stir and cook for 5 minutes until the sugar dissolves. Let it cool for 15 minutes before using.
  • Distribute the blueberries, mint, and lime slices evenly among ten ¹⁄³-cup (80ml) iceblock moulds. Strain the lime mixture into a jug and pour it evenly among the moulds. Insert iceblock sticks and freeze for 6 hours or until firm.
