Tender and flavorful Americanized Filipino adobo stew with pork or chicken, perfect over rice.
Ingredients:
  • 1 tablespoon vegetable oil
  • 2 pounds cubed pork meat
  • 4 cloves garlic, chopped
  • 1 (32 fluid ounce) container chicken broth
  • 0.25 cup dark soy sauce
  • 0.25 cup apple cider vinegar
  • 5 bay leaves
  • 1 (14 ounce) can unsweetened coconut milk
  • 2 tablespoons all-purpose flour
Instructions:
  • In a Dutch oven over medium heat, brown the pork in hot oil until evenly cooked.
  • Sauté garlic in the Dutch oven until tender. Add chicken broth, soy sauce, and cider vinegar. Drop in bay leaves and bring to a boil. Simmer gently for 1 hour until pork shreds easily. For a thicker sauce, mix flour with coconut milk, broth, or water and stir in. Keep meat moist by ensuring it's covered in liquid. Add more broth or water if needed to prevent drying.
  • Mix the flour with the coconut milk and pour it into the Dutch oven. Cook until it is heated through.
