Juicy chicken breasts coated in a flavorful herb and oil blend, roasted alongside fresh vegetables.
Ingredients:
  • 2 tablespoons olive oil
  • 1 tablespoon garlic salt
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon ground black pepper
  • 1 teaspoon Old Bay® Seasoning
  • 1 teaspoon seasoning salt
  • 4 skinless, boneless chicken breast halves
  • 2 medium green bell peppers, chopped
  • 2 large tomatoes, chopped
  • 1 red onion, chopped
Instructions:
  • Preheat oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine olive oil, garlic salt, parsley, chives, pepper, Old Bay Seasoning, and seasoning salt in a bowl. Massage half of the mixture onto the chicken breasts and transfer them to a baking dish.
  • Coat the green bell peppers, tomatoes, and red onion in the remaining olive oil mixture and place them on top of the chicken.
  • Roast in the oven for 1 hour, giving the vegetables a gentle stir halfway through, until they are tender, the chicken is fully cooked, and the juices run clear.
