Lisa's Favorite Carne Asada Marinade

Tender and flavorful carne asada: spicy citrus and soy marinade, marinate for 24 hours for best results.
Ingredients:
  • 0.75 cup orange juice
  • 0.5 cup lemon juice
  • 0.33333334326744 cup lime juice
  • 1 bunch fresh cilantro, chopped
  • 0.5 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon ground paprika
  • 1 tablespoon ground black pepper
  • 1 teaspoon finely chopped canned chipotle pepper
  • 1 teaspoon dried oregano
  • 0.5 cup olive oil
  • 3 pounds flank steak
Instructions:
  • Mix fresh orange, lemon, and lime juices in a large glass or ceramic bowl. Add in cilantro, soy sauce, garlic, chili powder, cumin, paprika, black pepper, chipotle pepper, and oregano. Stir well to blend all the flavors together.
  • Gradually drizzle in olive oil while whisking until fully incorporated. Set aside 1 cup of the marinade in a small bowl, cover with plastic wrap, and refrigerate for later use after cooking the steak.
  • Flatten the steak to 1/4 inch thickness by firmly pounding it between two sheets of heavy plastic on a solid surface using the smooth side of a meat mallet.
  • Tenderize the steak by poking it all over with a fork. Place the steak in a delicious marinade in a large bowl, cover it, and let it soak in the refrigerator for 24 hours.
  • Preheat your outdoor grill to medium-high heat and lightly oil the grate before cooking.
  • Take the steak out of the marinade and gently shake off any extra marinade. Dispose of the rest of the marinade.
  • Grill steak to your liking on the preheated grill, about 5 minutes per side for medium-rare perfection.
  • Slice the grilled steak thinly against the grain.
  • Transfer to a serving platter and drizzle with the remaining marinade. Serve right away.
