Try this delectable taco-inspired casserole with seasoned ground beef, gooey Cheddar cheese, hearty kidney beans, mixed veggies, and zesty salsa.
Ingredients:
  • cooking spray
  • 2 teaspoons olive oil, or to taste
  • 0.5 onion, chopped fine
  • 2 cloves garlic, minced
  • 2 pounds ground beef
  • 1 (1 ounce) packet taco seasoning mix
  • 4 cups cooked rice
  • 1 (16 ounce) package southwestern-style mixed frozen vegetables
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 2 cups shredded sharp Cheddar cheese, divided
  • 0.5 cup salsa
  • 0.25 cup sliced Kalamata olives
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then slick up a casserole dish with some cooking spray.
  • In a hot skillet, saute onion and garlic in olive oil until onion is tender, about 5 minutes. Add ground beef and cook until browned, breaking it into small pieces with a wooden spoon, 5 to 7 minutes. Stir in taco seasoning mix to season the beef mixture.
  • Combine beef mixture, rice, vegetables, kidney beans, 1 cup Cheddar cheese, salsa, and olives in the casserole dish. Top with the remaining cheese.
  • Bake in a preheated oven until the cheese is gooey and the dish is heated through, around 30 minutes.
