Vibrant veggie lasagna bursting with zucchini, bell peppers, and rich homemade tomato and cheese sauces.
Ingredients:
  • 2 tablespoons olive oil
  • 3 onions, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 2 sliced zucchini
  • 8 chopped tomatoes
  • 3 tablespoons tomato paste
  • 4 cloves garlic, minced
  • 2 tablespoons dried oregano
  • 2 tablespoons dried basil
  • 1 tablespoon dried thyme
  • salt and pepper to taste
  • 2 tablespoons butter
  • 1.5 tablespoons all-purpose flour
  • 3 cups milk
  • 1 cup shredded Cheddar cheese
  • 0.125 teaspoon freshly ground nutmeg
  • 12 spinach lasagna noodles
Instructions:
  • In a large saucepan, heat the oil. Saute the onions for 3 minutes, then add the peppers and saute for 2 more minutes. Add the zucchini and continue sauteing for 3 minutes. Finally, add the tomatoes, tomato paste, garlic, oregano, basil, thyme, salt, and pepper. Cover and simmer for 20 to 30 minutes until the sauce reaches desired consistency. Enjoy the rich flavors!
  • First, preheat the oven to 200 degrees F (95 degrees C. Then, generously grease a 9x13 inch baking dish.
  • While the sauce simmers, melt 2 tablespoons of butter in a saucepan. Incorporate the flour into the butter and stir briskly for 2 minutes. Slowly pour in the milk, stirring constantly until the sauce thickens. Mix in the cheese, saving some to sprinkle over the lasagna. Blend the cheese into the butter and flour mixture until fully melted. Season with nutmeg, salt, and pepper.
  • Quickly dip the lasagna noodles in water for 30 seconds.
  • Spread a portion of the tomato sauce on the bottom of the dish, then add a layer of lasagna sheets followed by cheese sauce. Repeat layering until the top layer is cheese sauce. Sprinkle nutmeg, salt, pepper, and reserved cheese on the final layer of cheese sauce.
  • Bake until the top is golden brown, about 40-50 minutes.
