Tangy tomatillos and sweet strawberries in a delectable summer pie.
Ingredients:
  • 1 pastry for 9-inch double crust pie
  • 3 cups sliced ripe tomatillos
  • 3 cups sliced strawberries
  • 0.25 cup instant tapioca
  • 1.5 cups white sugar
  • 1 teaspoon lemon juice, or more to taste
  • 3 tablespoons butter, sliced
Instructions:
  • Preheat the oven to a piping hot 400 degrees F (200 degrees C) and gently fit 1 pie crust into a 9-inch pie dish.
  • Combine tomatillos, strawberries, tapioca, sugar, and lemon juice in a bowl. Let sit for 15 minutes until sugar is dissolved, stirring occasionally. Transfer the mixture into the pie crust and top with butter slices.
  • Place the second pie crust over the filling, pinch the edges to seal, and cut slits on top for ventilation. Transfer the pie onto a baking sheet.
  • Bake in the oven until the top is golden brown and the filling is bubbling, approximately 50 minutes.
