Ingredients:
  • 1 cup cake flour
  • 1 cup whole wheat flour
  • 1 cup packed brown sugar
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.66666698455811 cup buttermilk
  • 0.33333298563957 cup vegetable oil
  • 0.5 cup white sugar
  • 1.5 cups grated carrots
Instructions:
  • Preheat the oven to a perfect 350 degrees F (175 degrees C), then prep your 9x13-inch baking pan or two 9-inch round cake pans by giving them a light grease and flour coating.
  • Combine the flours, brown sugar, cinnamon, baking powder, and baking soda in a large bowl. Pour in buttermilk and oil, mix until thoroughly combined, then add the egg yolks and mix until fully incorporated.
  • In a separate bowl, vigorously whisk egg whites until frothy. Slowly add white sugar while whisking, then keep whisking until stiff peaks form.
  • Gently incorporate fluffy egg whites into the batter, followed by folding in the carrots. Pour the mixed batter into the prepared pan.
  • Bake in the preheated oven for 25 to 35 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool before serving.
