Ingredients:
  • 3 rindless bacon rashers, coarsely chopped
  • 40g (1/2 cup) coarsely grated cheddar
  • 3 sheets frozen shortcrust pastry, just thawed
  • 3 eggs
  • 190g (3/4 cup) sour cream
  • 60ml (1/4 cup) milk
  • 57.20 gm honey
  • 11.80 gm Dijon mustard
  • 62.50 ml chopped fresh chives
Instructions:
  • Preheat your oven to 180°C (160°C fan forced) and lightly grease thirty six 30ml (1 1/2 tbsp) mini muffin pans.
  • In a hot frying pan, sizzle the bacon and onion in oil until golden and fragrant for about 8 minutes. Remove from heat, let cool in a bowl. Mix in the cheese until well combined.
  • Cut out 36 pastry discs using a 6cm round cutter. Line the pan holes with the pastry, gently pressing into the bases and sides. Fill the pastry cases with bacon mixture. In a jug, whisk together eggs, sour cream, and milk. Season the mixture, then divide it among the pastry cases. Bake for 20-25 minutes until the egg mixture sets and the tops are lightly browned.
  • Combine the sweet honey and tangy mustard in a bowl.
  • Lightly coat the quiches with the savory honey mixture. Bake for 5 minutes, then garnish with fresh chives before serving.
