Little lime and coconut meringue kisses

Tropical twist on classic meringues for bite-sized indulgence.
Ingredients:
  • 215.00 gm caster sugar
  • 4 egg whites
  • 1 tsp finely grated lime rind
  • 1/4 tsp coconut essence
  • Green gel food colouring
  • 3.40 gm desiccated coconut
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced, and prepare 2 large baking trays by greasing and lining them with baking paper.
  • Spread a layer of sugar evenly on the prepared tray. Bake for 5 to 6 minutes until the sugar's edges slightly melt. Take out of the oven and lower the temperature to 100°C/80°C fan-forced.
  • Beat egg whites in an electric mixer until soft peaks form. Gradually pour in sugar while mixer is running, allowing it to incorporate slowly. Beat for 5 to 6 minutes until sugar is fully dissolved. Mix in lime rind and essence until well combined.
  • Add colorful stripes to a piping bag by running a skewer dipped in food coloring down the sides. Fill the piping bag with half of the meringue mixture. Pipe mixture onto a prepared tray, spacing the meringues 2cm apart in a 4cm diameter shape. Repeat the striping process with more food coloring and remaining mixture. Sprinkle coconut on the meringues before baking.
  • Bake for 45 minutes or until the top is gently firm when touched. Turn off the oven, and allow the dish to cool completely inside with the oven door shut. Serve and enjoy!
