Decadent peanut butter cheesecake for the ultimate peanut butter lover; creamy and rich, with a hint of sweetness. Substitute milk for half-and-half if needed.
Ingredients:
  • 1.5 cups graham cracker crumbs
  • 0.5 cup finely chopped peanuts
  • 0.75 teaspoon ground cinnamon
  • 0.75 cup butter, melted
  • 3 (8 ounce) packages cream cheese
  • 0.75 cup peanut butter
  • 2 tablespoons all-purpose flour
  • 1 egg yolk
  • 0.25 cup half-and-half cream
  • 2 cups semisweet chocolate chips
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and wrap the outside of a 9 inch springform pan with aluminum foil.
  • Prepare the crust by mixing graham cracker crumbs, peanuts, and cinnamon in a medium bowl. Blend in melted butter. Firmly press the mixture onto the bottom and sides of an ungreased 8 or 9 inch springform pan, then set aside.
  • Prepare the filling by combining cream cheese, peanut butter, sugar, flour, and vanilla in a large mixing bowl. Use an electric mixer to blend until smooth. Add eggs and egg yolk at the same time, mixing on low speed until combined. Gently fold in half-and-half and chocolate chips.
  • Carefully transfer the batter into the springform pan and set the pan in a larger baking pan. Fill the baking pan with boiling water until it reaches halfway up the sides of the springform pan. Bake in the preheated oven for 40 to 50 minutes.
  • Allow cake to cool fully, then chill in the refrigerator for a minimum of 4 hours before enjoying.
