Little nectarine puddings

Ingredients:
  • 1kg nectarines
  • 60ml (1/4 cup) amaretto liqueur
  • 175g caster sugar
  • 115g unsalted butter, softened
  • 2 eggs
  • 40ml (2 tbsp) milk
  • 225g self-raising flour, sifted
Instructions:
  • Preheat your oven to 180°C.
  • Thinly slice the nectarines, remove the pits, and place them in a bowl with amaretto and 60g of sugar. Mix well. Distribute the nectarines evenly among six 300ml ovenproof dishes, ensuring there is ample space between the fruit and the top of the dish for the pudding to expand.
  • In an electric mixer, combine the butter and remaining sugar until pale and fluffy. Beat in the eggs one at a time, followed by the milk, then gently fold in the flour.
  • Evenly distribute the mixture into the dishes, arrange them on a baking tray, and bake for 30 minutes or until the tops are golden brown and have risen.
  • Enjoy while this dessert is still warm, paired with a scoop of luscious ice cream.
