Transport yourself to an Australian summer with these easy and delightful individual ice-cream cakes. Featuring passionfruit, vanilla ice cream, berries, and the iconic Cherry Ripe, they are perfect for making with kids. Feel inspired? Ingredients:
  • 2 litres vanilla ice cream, softened
  • 4 passionfruits, halved
  • 400g can mixed berry combo, well drained
  • 2 x 55g pkts Cherry Ripe bars, chopped
Instructions:
  • Scoop the ice cream into three bowls, focusing on one bowl at a time while keeping the others in the freezer.
  • Pour the passionfruit pulp over the ice cream in a bowl. Divide the mixture into 9 x 1/2 cup jelly moulds and level the surface with a spoon. Freeze for 10 minutes.
  • Combine the berries with one of the bowls of ice cream. Pour the berry ice cream over the passionfruit ice cream and ensure a smooth top layer. Freeze for 10 minutes.
  • Combine the Cherry Ripe with the remaining mixture, then transfer it to the mold and smooth the top. Cover with plastic wrap and freeze overnight.
